Mexican Fajita Stack

Mexican food is possibly one of the kindest to vegetarians as most dishes can be adapted as a meat-free option. In our house, we love Mexican cuisine as it’s so versatile and always delivers in taste.

Fajitas are the standard Mexican dish that pretty much everyone loves. The inspiration for our twist on fajitas came whilst eating a lasagne. We imagined a Mexican-inspired lasagne, but without the pasta. So here it is, our Mexican Fajita Stack! Enjoy.

No special equipment required

Ingredients to serve 4:

  • 1 red pepper sliced
  • 1/2 white onion chopped
  • 3 crushed garlic cloves
  • 1 green chilli chopped
  • 150g Quorn Steak-Style Strips
  • 1 small tin of sweetcorn
  • 1 tin of black eyed beans
  • 1 400ml tin of chopped tomatoes
  • 2 tbsp fajita seasoning
  • salt & pepper
  • 1 tsp oil
  • 3 tortillas
  • 60g cheddar cheese

Step 1:

Preheat the oven to 180ºC.

Step 2:

Heat the oil in a pan and add the onion. Fry for one minute before adding the red pepper, garlic and green chilli. Fry for a further minute then add the Quorn strips, sweetcorn, beans and fajita seasoning. Combine so the spice is evenly distributed and stir in the chopped tomatoes. Add salt & pepper then leave to simmer for 20 minutes, stirring occasionally.

Step 3:

Place the first tortilla on an oven tray. Spoon an even layer of the fajita mixture over the tortilla, leaving about 1cm from the edge (otherwise it’ll overspill). Top with the second tortilla before adding another layer of the mixture. Add around a third of the cheese before topping with the final tortilla. Cover with cheese and bake for 8-10 minutes until the cheese has melted and the tortilla starts browning.

Step 4:

Slice into even portions and serve.

Our Mexican Fajita Stack can be enjoyed with all sorts of sides. From garlic bread and rice, to chips and salad, this dish is definitely a crowd pleaser!

Vegan?

Replace the Quorn with cannellini beans and add a top layer of the mixture instead of the cheese.
